coat bottom of fry pan with oil. dip eggplant in egg and then coat with breadcrumbs. Fry 2-3 at a time just until brown on each side. drain on papertowels. when all eggplant is fried take the casserole dish spoon enough sauce to cover bottom and start to layer as follows...
1.eggplant slices
2.sauce
3. parm cheese
after last layer just add as much cheese on top as you like...
bake for 20 mins at 350..until bubbly
