Sift together dry ingrediants. Heat milk, butter and water to boiling point. Make well in dry ingrediants, and pour wet contents into it. Mix together but do not "knead dough" excessively. Roll out into strips, and place cubes of cheese into each strip 1 inch apart. Fold top halves of strips over cheese portion, and cut into squares. Fry in hot oil (hotter the better). Empanandas should be golden brown, and you should turn them at least once.

I used to have these when I was in Mexico. My mom would make them at least once a week. I was so skinny back then than nothing could really make me gain the pounds but now I can't really afford to eat them as often.
Either way you are right! they are delicious!!!

Yeah I made them for my son the other day, and he ate the entire plate. then he got sick and threw up all night, because he ate too much. Now he's begging me for more. I wish I could bake them, do think they would taste as good?

I don't think they would taste good baked but then again I've never tried them that way.
I would try baking one and see how it turns out.
You can also try drying them with paper towels before you serve them.
I love them with media crema on top and cheese. My mom used to make them with not only white cheese but she also made them with ground beef and one of my favorites the ones with ham and a slice of cheese. Kraft cheese taste really good with the ham. Man, I'm getting hungry. lol

Have you tried making picadas? or sopes how they call them in the rest of the country?
I'm from Veracruz so things are called a little different than the rest of the country. Specially in DF.
My mom is an excellent cook and I'm not as good as she is but hubby loves my food. :D
I also grew up with "gorditas yucatanas" Almost same process as the empanadas but instead of one tortilla you make two and lay the first one and put shredded chicken and cheese as a filling, then you lay the other tortilla on top of it and seal it with your fingers. Deep fry them and once they are cooked take them out and dry them with a paper towel then have a nice salsa picante and add media crema and shredded cheese. Man those are THE BEST!
I'm telling you this conversation is making me home sick. I'm so hungry right now.

they all sound so good i will have to make them but i guess i am lucky because i can get all the mexican food i want right now and now i miss some american foods.

I get sick of Mexican food. Thats all we ever eat here. My husband refuses to eat American foods. He does'nt like anything else, well sometimes I trick him with Native food, and he thinks it's just a dish from another part of Latin America, lol....But i've heard it's not the same here as in Mexico. The food I mean:)

yeah it def not the same in the united states as mexico. but i miss some of the american food. but after a while we get tired of mexican food lol.

Oh man that "Gorditas Yucatanas" sounds so darn good right now! No I don't think i've tried Picadas but Sopes yes. I think I might try and make that "Gorditas Yucatanas" for dinner on Monday (my husbands day off).
I'm not that great a cook either, but my hubby won't eat American foods so I had to learn to cook Mexican stuff. My friends say I'm too nice, but he was a spoiled little brat when we met, lol. He's mellowed out now though, since i've gotten him properly trained, lol ;)

You do need to start cooking american food for your hubby. Sometimes we think americans don't know how to cook but I've tried some pretty good meals made by americans.
I cook a little bit of everything. From mexican to american, italian and I've even dared to cook chinese. lol
Hubby will eat anything I cook except for lentejas. He doesn't like the lentejas and I really don't force him to eat anything but he has to at least try it once.
Make a nice pot roast and your hubby will start to feel the love for american food. hehe
Let him know that there is more than hamburgers in the american menu. :bleh:

lol, one time I made menudo for my step dad and husband but it was the Native version (pretty much the same), and my husband about threw up. He does not like Menudo, but he loves cow brain ewwwwwwwwwwwwwwwwwww. I hate menudo it stinks so bad.
I make chinese some times for him, and he whines like a little baby. He says it's to sweet. I've made pot roast and he said it was ok, but I'm not convinced he liked it. I know though he needs to learn to eat American food.

Oh, and I don't care for mole either although I will make it for the family. That day I make a one serving of something I really love:).. I don't like the texture or flavor of mole green or red.

Ahhh they sound really nice!!! I love mexican food I could eat it every day!! I have lots of my own versions since im vegetarian and try to eat really healthy.. but we all need some deep frying once in a while :)

You can always put soy cheese or a soy substitute for meat in them. Not sure how they'd taste but if you eat soy then maybe it would ok. As for the oil you could use olive oil or even soybean oil. It would taste a little but "nutty" with the soy oil though.
My son doesn't eat any dairy either except on rare occasions. He's allergic to dairy but he still gets it sometimes.
