preparation

Blend
eggs, milk, and condensed milk, all together,

melt the sugar, and spread into a bunt cake pan, pour the "batter mix" inside the pan,

then you put the bunt pan inside a baking dish, and add 1/2 inch of watter to the bottom of the baking dish, and bake for 1 hour on 350

Melting sugar is the hardest part of this recipe. You have to be careful not to "scorch" it, or it will taste bitter.
You can do it many different ways, but this is the method I use. Keep in mind that the pan will get VERY HOT! I wouldn't use a teflon pan.
I use a frying pan actually, the sugar is spread out thinner and will cook more evenly.
I pour the sugar directly into the pan with NO water. Just put the sugar in the pan and use high heat. After a few minutes, the sugar will begin to bubble around the sides. Do not stir!!!!!!!!
Let the sugar turn into a liquid. And reduce the heat at this time.
It will liquify slower so that you can prevent it from burning.
When its done, all the sugar is melted and it is a caramel brown color.
It is so hot so be very careful!!
Pour it into the flan pan and cover the sides too!

Can you explain the part about baking the flan in a pan in water? Does that mean the pan is in another pan in water or there is water at the bottom of the first pan? Sorry never made flan before and want to try it.
