Heat oven to 400, and place tomatoes and chillies on a pan, stick in oven for 30 minutes or until charred.
Cut tortillas into thin strips, and heat oil in a pan. Fry strips until crispie and set aside.
in blender add tomatoes without skins, chillies seeded/skinned, onion, and garlic until a smooth sauce. In large pot fry sauce for 5 minutes with oil. Add chicken stock and bring to boil. add tortillas, and cook everything for 3-5 minutes.
Grate cheese, and at last minute before serving add cheese and epazote in each bowl of soup.
