View Full Version : Sopa de tortilla "Tortilla Soup"

Heat oven to 400, and place tomatoes and chillies on a pan, stick in oven for 30 minutes or until charred.
Cut tortillas into thin strips, and heat oil in a pan. Fry strips until crispie and set aside.

in blender add tomatoes without skins, chillies seeded/skinned, onion, and garlic until a smooth sauce. In large pot fry sauce for 5 minutes with oil. Add chicken stock and bring to boil. add tortillas, and cook everything for 3-5 minutes.

Grate cheese, and at last minute before serving add cheese and epazote in each bowl of soup.

Oh I forgot the avacados:(

You can put them in as you put tortillas in.

It is really good! My husband created this recipe for a restuarant he used to work at. He did their menus for them, and then they had to close the doors. I have more to post.
