Get a few bags of frozen raspberries, a jumbo tub of light cool whip, and a few packages of sugar free raspberry jello. Let the raspberries and cool whip thaw.
Make one package of the jello in a pretty clear glass bowl and let it cool in the fridge an hour and a half then stir in a half bag of the raspberries and let it cool until completely set and firm. Fold a half bag of raspberries into 2/3 of the coolwhip and layer it on the jello, then make the second box of jello and pour it on top and after it's cooled for an hour and a half, pour in half the second bag of raspberries and let it finish cooling until set. Garnish it with the remaining cool whip and the rest of the raspberries.

Or you could buy a bunch of pre-made frozen pie crusts and those mini disposable tin pie pans and make a bunch of mini pot pies by filling them with frozen mixed vegetables and canned mushroom soup and baking them on a cookie sheet. You could take a heart cookie cutter and and knead some red food coloring into one of the crusts then re-roll it out and cut out a bunch of red hearts and "paste" them to the top of each pot pie with a little wter and egg white.

They make small little pie crusts/dessert crusts, just get the jello cheescake mix and make little cheesecakes with whipped cream on top. They're very easy.

Here's a really good recipe for Hot Artichoke Spinach Dip (http://allrecipes.com/Recipe/Hot-Artichoke-Spinach-Dip/Detail.aspx?src=etaf)... my hubby loved it. We had people over and they loved it too. We served it with Ciabatta Bread and tortilla chips... mmmmmmmm... I want it now.

OMG, Hectorswife. That looks so yummy. Too bad it's probably my entire calorie allowance for one day. Ugh.
