View Full Version : Guatemalan Tamales!!!

Preheat oven to 450. Cover pan with tin foil and spray pan with pam and cook garlic, onion and tomatoes on pan until soft. (10-20 min)

In a med saucepan, brown rice. Stirring constantly. Once brown, put rice in a med bowl of 2 cups of water and set aside. Cut up peppers (these are dried), cinnamon, cloves and add to pan and soften peppers, add to water. Put in bay leaves, thyme, basil in pan, and brown, be careful not to burn them. Put in water mixture. Put sesame seeds into pan. Once the seeds start to pop, they are ready. Put in 1 oz of the pumpkin seeds into pan. Add to water mixture.

Spoon water mixture into blender or food processor and blend until you can’t see the rice. Strain the mixture into a pan. Use to spoon to scrape the inside of the strainer.

If you have a lot in the strainer, add back to food processer, add more water and process again. And strain again.

The sauce should look like a paste.

Put sauce on med high to thicken. Whisk constantly and do not burn.

add Chicken Boulion (2-3 T), pinch of cumin, and the package of pollo y tomate.

Once sauce thickens add ½ c of water to thin, still whisking constantly. Once you’re completed the sauce should look like spaghetti sauce. Set Aside.

In a large bowl add 2 lbs of Masa Harina and about 4 cups of water. Add 1 can of chicken broth and stir. The mixture should be thick. Add more water to thin to achieve a cake batter appearance.

Put the rest of the pumpkin seeds in the food processor and blend. Once they are processed add about 1 -2 cups of water and blend until milky.

Strain into the Masa Batter. Discard the left over in strainer.

Add Bouillon, minced onion and salt to taste.

In a large pot add oil to cover the bottom about ½ inch, put on med hi. Once you have the consistency to pancake batter pour into large pot.

Stir constantly. The batter will get thick. If its look thick to stir you can add water to thin it out. It should look like mashed potatoes.

Once you are completed, Cut up the banana leaf into 30 pieces.

Spoon on masa batter.

Push a spoon in the center of masa batter and spoon is sauce mixture.

Put a piece of chicken in the center, a few chic peas and a celery slice and red pepper slice.

Fold tin foil up and fold over tight.

Push the air out, and fold under twice one side, use your hand to push down the other side and fold under twice.


Once you have completed making all the tamales, they should look like this:

In a large pot, put tin foil, or something in the bottom, so the tamales don’t come in direct contact with the pot.


Fill pot ½ with water, and cover the top with tin foil. Once the water is boiling, they will need to cook for 1 hr ½.

Jenny! I have not responded to your e-mail! Thank you for sending that detailed photo-filled recipe to me! I haven't gotten the chance to try it out, but it seems very thorough and I just think it was so sweet of you to do that for me!! I really do appreciate it and when I actually get the chance to make it, I'll let you know how they turned out!!! <3

Aww, thanks. I actually did post the doc on google docs as well (in the link above, so it has pictures too) let me know how everything goes! :)

This christmas my mom was out of the country so it was up to me to make the Chuchitos... they were ok... for my first time making them by myself!
I have yet to try making these though... They seem like they are way harder
