View Full Version : Bruscheeta 'n Cheese-stuffed Chicken Breast

Combine tomatoes, 1/2 cup of cheese, basil and dry stuffing mix. Stir until moistened.
Place 2 chicken breast halves in a large freezer-weight resealable plastic bag.
Pound chicken with meat mallet or side of heavy can until chiken is 1/4 inch thick.
Repeat with remaining chicken, top-sides down, on cutting board.
Spread evenly with stuffing mix.
starting at one narrow ends, tightly roll up chicken.
Place seam sides down in a 13x9 inch baking dish.
Drizzle evenly with dressing.
Bake 40 minutes.
Spinkle with remaining 3/4 cup of cheese.
Bake an additional 5 minutes or until chicken is cooked through (165 degrees) and cheese is melted.

Regular way because I don't like jalapenos but i don't think i put enough dressing on mine and if i had time i would have broiled the chicken. But yes, this was ready within the hour which was great because I had to hurry and cook before hubby had to leave for work (he got called in early :( )
