Weird... I had that recipe up and I was looking at it and another one to come up with something. I'm just wondering if anyone here has made this or someone's MIL as a home version or something like that... I'll post it after I make it and let you all know how it turns out.

I'll let you know. It's sort of a special dish, and a little complex for the average American cook (maybe just unfamiliar more than complex) - but I found a Rick Bayliss recipe (http://www.fronterakitchens.com/cooking/recipes/stuffed_chiles.html), which I am going to use in conjunction with this one (http://www.elise.com/recipes/archives/000114chiles_en_nogada_chilies_in_walnut_sauce.php ). It's funny that it is a signature Puebla dish and my MIL doesn't make it and I don't think Fermin has ever even had it!
They make rellenos in a broth with a similar picadillo, so I guess the sauce, which is actually quite simple, is the variable. I told Fermin I was going to make this on the weekend and he seems to think that I am not going to be able to do the peppers correctly. I'll show him I can toast and peel a poblano just as well as any, well, as any poblano! (Probably after I completely char a few first!)

that one looks good too.. pretty similar, except for a few differences in the picadillo. I searched epicurious this morning but I should have known better and searched "stuffed pepper" or "stuffed poblano" not just "chiles en nogada." Thanks!
