Place the Pork , diced onion, and oregano in a pot to boil. (or you could put it in a slowcooker)
When meat is tender, 4-6 hours, put in the drained can of hominy.
Place a small amount of oil in a pan (enough to cover the bottom) Start frying the red chiles after taking out the seeds. When chiles are soft place in a bowl with a small amount of hot broth. Next fry the chile de arbol, when done place with the other chiles and cover the bowl. Finally add the tomato, tomatillo, and garlic to the pan. Fry until soft.
Add chiles, tomato, tomatillo, garlic, allspice, and some broth from the meat to the blender. Blend
Strain liquid from above into meat and hominy.
Season to your liking
To serve: Put lettuce, onion, limes, red chile, oregano, and toastadas/corn chips out on table.

Thanks for this! My SILs make pozole but it's SO greasy because they use all that fatty head meat. I think I'd like it a lot more with a roast...

You can also make pozole with chicken breast. It's really good!

oh, can you post the pozole verde recipe? That one my hubby's fam never makes, that would be a fun surprise thing for me to make...
