Chop up the chocolate and place in a medium size bowl
Heat the cream until steaming and pour over the
chocolate. Mix until the chocolate melts and is
incorporated into the cream. Chill for 1-2 hours. Then,
using a small melon baller, spoon or your fingers (very
sticky, so wear gloves) roll the chocolate into balls and
then into cocoa, powdered sugar, or sugar and cinnamon.
If the chocolate becomes too sticky you can always put them
back in the fridge or freezer. Refrigerate.
