In separate saute pan, high heat, heat olive oil. Add carrots, onions, brown slightly (5 minutes). Add frozen spinach. Turn off heat. Add 1-2 cups of broth to glaze the pan.
Add vegetables to the broth/meat pot.
Add salt, pepper, garlic powder and hot pepper flakes, to taste.
Continue to simmer while you make the dumplings.
Dumplings
Whip 2 eggs and salt in small bowl. Add flour to make dough texture. Knead well, adding additional flour to keep from sticking. Roll into long roll. cut dumplings to shape (I like them small like noodles).
Add dumplings to soup.
Simmer an additional 5 minutes, the dumplings are done when they rise to the surface.
(If you are low on broth, you can boil the dumplings separately in pot of boiling water with a pinch of salt and teaspoon of oil. I always prepare my dumplings separately, so they don't soak up my broth, either way, it turns out great.)
