Bake the squash in a 400 degree oven for 45 minutes or until the flesh is soft but the shell is still firm. Heat the mincemeat in the microwave or in a saucepan. Neatly scrape the flesh out of the squash using an icecream scooper, leaving about 1/2 inch of flesh in the shell.

To make the filling, combine the flesh and about 2/3 of the cream cheese with an electric mixer until creamy. Add the mincemeat and stir until well blended.

Neatly scoop the filling back into the squash shells and garnish with the remaining cream cheese. Empty any remaining water from the baking pan and put the squashes filling-side up, cover with aluminum foil, and put them back in the oven. Heat for about 20 minutes or until the filling is hot and slightly set.

Serve warm with butter or margarine, if desired.

Would also be great garnished with raisens or craisens.
