View Full Version : Baked rice and chicken

1. First set the oven to 400 degrees to bake
2. In the cake pan dump the two packs of rice into it.
3. Add some olive oil (the packs say add about 1/2 tbs. of butter, but I just add what I feel of the olive oil)
4. Follow the packet of rice on how much water to add, but what I do is sub one cup of water for one cup of chicken broth. I would not add to much more as it might be a bit salty.
5. Get a fork and stir around the rice in the cake pan.
6. Get the chicken breasts and rinse them off. (I like to rinse my chicken off).
7. cut some slices in the chicken breasts so that they can cook quicker.
8. mix some olive oil and soy sauce together in a bowl.
9. Place the chicken breasts on the plate and rub the chicken with the oil/soy mix.
10. Season to your liking the chicken on both sides with: garlic powder, seasoned salt, seasoned pepper
11. Place chicken in the cake pan. Yes, the chicken will look like it's just floating, but it turns out really great.
12. Place the chick in the oven and cook for about 1:30. Each oven is different. Just make sure the chicken is not pink inside.
13. One last think, when checking on the chicken I always spoon more oil/soy mix over the chicken so that it won't get too dry.

omg! my mom has such a similar recipe.. we use season salt and paprika though..
