My fiance has an eight year old son, who has decided that he wants to stay w/ his Mom in Honduras. Although it was required for me to indicate his child on the I-!29F, is it required for me to compile documents for him for the interview? Will it hinder the process at all. We are prepared to go to the interview with one set of documents. Any experience w/ this?

Only if he will be accompanying your fiance. Children are listed on the initial petition regardless of whether or not they will be applying for a K-2 visa (a derivative of the K-1). If a child is named on the initial I-129F petition, they have up to a year to apply for and enter the US after the K-1 is issued.

If he did get the greencard under his father, then he would have to have presence in the US each year (is it 6 months out of the year?)
Otherwise, the GC status would not be maintained.
