Marinade:
mix the dill, rosemary, garlic, lime juice, zest, wine and half the olive oil together.
Add all the vegetables ( minus the mushroom ) in the marinade and let soak for about 1 hour. Add the lobster chunks and let soak for 2 more hours
brush the mushroom with olive oil and sprinkle with salt and pepper.
Soak th kebab sticks in water for about 1 hour
Grill the vegetables and mushrooms for about 5 minutes and set aside to cool
Poke the kebabs with the grilled vegetables, mushroom and lobster and pour remaining marinade over the kebabs.
Grill for about 7 minutes, take em off the grill and set aside for 5 minutes so the flavors reincorporate.
You can add whatever vegetables you like and you can substitute monk fish, scallops, tuna, swordfish, or shark instead of the lobster tails. Make sure you sprinkle salt and cook longer for the tuna, swordfish and shark.
