In a large skillet, brown chicken in oil. Add onion, garlic, and bell peppers and cook tender. Add coconut milk over the top. Add salt and red pepper flakes to taste. Cook down for 5 to 8 minutes. Transfer to a large baking dish. Bake at 425 till veggies are done. (about 30 minutes or so)

Veggies are the onion, bell pepper, and garlic. You've already cooked them tender in the skillet, but they still need a bit of baking to let the flavors meld.
Oh, I like to serve mine over saffron rice. makes it awesome.

..sounds yummy I have always wanted a recipe to use coconut milk..I'm sure my hubby will appreciate the dancing part... your too cute:bounce:

Saffron rice is sold in a little package. It's that yellow rice. Mahatma and Viggo are the brands I use.

wow arco, this is fabulous! i just burned my mouth because i couldn't wait for it to cool down. i loaded it up on the pepper flakes and the sweet/salty/spicy combination is fantastic!
lolollll i made it before i saw your saffron rice post...so i made saffron rice from scratch. it was really, really easy. just make rice with some diced onion and garlic, and i used the remaining bell peppers for color, and put in a pinch of turmeric and a pinch of ground saffron stems for each cup of uncooked rice. i used chicken broth instead of water, too.

we liked it, i used less garlic though because my Carlos hates it. i think i will add more coconut milk next time so we have sauce for our rice.

that's odd, i had tons of sauce with this amount of coconut milk.
