Begin by placing the meat of your choice in water wiyj a few slices of onion and a few sprigs of cilantro to boil and simmer. Cook about 2 hours or until done.
Fry the rice in a little bit of oil, add about 1 3/4 cups of water, simmer with lid on for about 10 minutes, the rice should be just about done. Add about 1/2 cup of stock and let the rice simmer to absorb all the flavor of the stock.
While the rice is cooking place a small amount of oil in a frying pan on medium heat. Begin by frying the ancho chiles and chile de arbol (if you want them), place in the blender with a small amount of stock (about 1/2 cup) Next, fry the onion, tomato, and garlic until soft, place entire mixture in blender. Add cloves and cumin and blend. Blend for about 1 minute and strain into rice.
You can add the meat into the mole or serve it on top of th rice.
Mole is traditionally eaten with jalapenos in vinegar. (or atleast in my hubbys family) I also like to serve it with lettuce in place of tortillas.
