1. brown the meat w/ bay leaves. Add onion when meat almost done
2. fry the potatoes in a little olive oil
3. Boil water and add the chile guajillo and chile de arbol
4. Wait for chiles to be softened then let cool
5. When chiles are cool put in blender with liquid (to your preference), along with the chiles in the blender add one garlic clove, lots of cumin, salt to taste, and oregano
6. Put everything together - the meat, potatoes, and the chile sauce

My hubby loves this. He says it tastes like chorizo. You can serve it with tortillas and some queso fresco with beans.
Word of advice: Make sure you cool the chiles and water you add to the chiles in the blender before blending. I learned this the hard way LOL. I went to go blend something and I didn't cool it, it was boiling hot, and my glass blender exploded almost in my face!
