Heat oil in large skillet over medium-high heat. Add onion; cook stirring occasionally until golden brown. About 5 minutes.
Add garlic and pickled jalapenos; cook 1 minute. Add tomatoes and 3/4 cup water (or 1/2 cup if using the canned tomatoes). Cook until almost evaporated--about 6-8 minutes.
Stir in oregano.
Season fish with salt & pepper. Reduce heat to medium. Nestle fish in sauce. Cover and cook until fish is opaque--about 5-7 minutes.
Serve with lime.

I DID see RR's show today, actually! The only difference with her recipe is that the fish was fried. But it looked good too!

Too funny! I bet it's much more healthy the way you're doing it! RR seems to make a lot of nice hearty fattening foods lol

What happened to the recipes? The part at the top that list the ingredients and the amounts is missing now! I just bought the snapper today to make this and I need to gather the rest of the ingredients, but they are not there now...:cry:

I think she said she doesn't like the olives so she doesn't use them.
I used some olives because I like them in a tomato-based sauce.

Sorry I didn't see this until now. Hope it isn't too late, Salsa...
2 tablespoons oil
1 large onion, sliced
4 garlic cloves, minced
chopped pickled jalapenos, adjust to level of heat you like
3 plum tomatoes, seeded or chopped (or 1 can diced)
1 tsp oregano
4 skinless snapper filets (or talapia is good too)
lime wedges to serve on the side

Thanks! It wasn't for last night. I found frozen snapper on sale for 50% off at Soopers yesterday, so I bought it with this in mind. I'll get the rest of the ingredients now and make it next week. I can't wait!
I have to practice some new things to make for hubby when he gets back. I did pork tenderloin last night for the first time and it came out great. Hubby was like "can you send me some?" After all this time in Mexico, I think he misses my cooking!

My hubby is doing the same thing...reminiscing about things that I cook...drooling over it when I tell him what I cook.

That is so sweet. God, I am dreading when C has to go back.
I have a good enchiladas recipe that C really likes--maybe your husband will too. I'll post it.

AWESOME!! Hubby made enchiladas once and I was cleaning the kitchen afterwards for HOURS...it splattered everywhere and I swear he destroyed every dish towel we owned. It would be better if I made them!
