View Full Version : Golden Chicken with Tomatoes and Olives

Season chicken with salt and pepper. Heat oil over med.
heat in large skillet. Cook chicken till golden brown, about
3 minutes per side. Transfer to a plate. Add onion to skillet
and cook until soft, about 5 minutes. Add olives, garlic,
tomatoes, and cook stirring 2 minutes more. Return
chicken to skillet, add wine, bring to a simmer. Cook until
chicken in cooked through and the sauce has thickened., 4
to 6 minutes. Stir in parsley. Divide chicken among
individual plates and pour sauce over top. Serve over rice.

oo this sounds really yummy. Any ideas on what you can use instead of olives?

Well, Marie I'm not really sure. See, the wine and the olives balance the structure of it. Even people that don't like olives like this dish. The olives take on a slightly sweet tone combined with the sweet grape tomatoes. And over the rice, the olives really get toned down. However, you might try pine nuts. Just temper the wine accordingly.

I made this when you posted it the first time. We liked it. I would use fewer olives the next time, to tone it down a bit. Maybe only 1/4 cup. :D

Yeah I don't like olives at all but the rest sounds great.

i'm going to put sweet bell peppers in there instead. I read somewhere that we can use those. We shall see! I'll let you know later.
