I always loved the recipe threads that would get started on the old site. Anyone have any favorite 4th of July recipes that they'd like to share? I'm always looking for a good potato salad....

you know, i need help on making brown rice. Im pretty good at making white rice but my brown rice gets too soggy but it is still hard... does that make sence?! lol....
if you guys have some pointers let me know!

Hmmm my boss calls this "Texas Caviar" Anyway here goes:
2 Cans of yellow Hominy
3 whole tomatoes diced small
2 cans of Fiesta corn
1 jar of Jalapenos chopped finely
2 cans of green chilies
1/2 red onion
2 bunches of green onion diced finely
2 cans of black eyes peas
1 can of black beans
1 full bottle of Zesty Italian Dressing
Mix in a large bowl and let marinate over night in fridge and serve with tostitos chips.
I know it sounds yucky but it's SOOOOOOOOOOOOO good when I saw it I looked at my boss and said your kidding me she said just taste it and well I have to admit it's so good!!!!!!! Ask Ellie she thought the same thing when I took it to her house but she ended up eating alot of it in between her 10 glasses of rum and juice LOL!!!!

For a different change for Potato Salad, try adding Roasted Red Peppers. At a restaurant (was a very nice restaurant) their potato salad only had potatoes, mayonaise and roasted red peppers, chopped finely............believe it or not, it was very tasty.

I have a good brown rice dish. It was my grandmother's.
1 cup rice
1 can beef consumme or beef broth
refill that can half full of water
1/2 stick of butter
1 small can of mushrooms
Dump all together in a baking dish and bake in the oven at 350 for 45 min to an hour.

Here's another neat little idea I just tried out. Ice Cream Cone Cupcakes! I think I saw it in a magazine, but I can't remember which one...sorry.
Use a cake mix by the directions.
Fill plain flat bottomed ice cream cones half way with the batter and bake at 350 for about 20 minutes. Ice them over the top and add a few sprinkles.
I'm making these right now to take to my son's daycare for his birthday. They look so cute! I'm sure the kids will love them!
UPDATE:
They are hard as Hades to transport! I dropped the first batch all over the counter trying to get them out the door. I cut holes in Nilla Wafer boxes and have them stuck down in there. Not so pretty, but maybe I'll make it to the daycare with them.

Speaking of birthday party recipes, a neat idea that worked great for me was individual ice cream for kids... I made them the day before by putting one scoop of chocolate ice cream inside of a pink cupcake liner (the silicone ones work even better) and then putting some sprinkles on top. It's really easy to do, I just put them back into the freezer until it was cake-cutting time and then it was super easy (and clean) to serve the ice cream!! And it didn't make the cake soggy when it melted! :o

I love potato salad!
Here's my "recipe"
not really because I don't measure I simply eye ball everything :wha:
Here are my ingredients though
Potato's (which ever you like) I use Idaho
Bell pepper (green and orange or red)
Relish
Boiled Eggs
Celery
Mayonnaise
Mustard
Salt
Pepper
Boil, Peel and Cube the potato's
Boil, Peel and finely cube the Egg's (I say one egg for one pound of potato's)
Clean and chop the celery and Bell pepper EXTREMELY FINELY
as small as you can I say about 1/2 tablespoon of each bell pepper for each pound
Combine, Potato, egg, celery, bell pepper and relish (about 1TBSP per pound)
in a big bowl, MIX
add Mayo and Mustard (more mayo than mustard) till it has the consistency you would like
Sprinkle Salt and Pepper to taste!
Enjoy!

I LOVE this cake!!!! Try it out!!!
Make a yellow cake (from the box).
Take 1 box (2 packets) dream whip
1-16 oz. philadelphia cream cheese
Make the dream whip and add in the cream cheese. Blend it all together until it is the consistency of icing almost (may have a few little chunks). Spread this on top of the cake.
Take 1-2 cans of cherry pie filling and spread on top of the dream whip/cream cheese topping.
Chill and serve.
It tastes soooooo good. I think I will make one this week. And, it is also so simple.

I bake too~! Everyone at work and my family loves my Italian Cake! I have only made it in Chocolate Flavor and the Lemon is my favorite!!
1 box fudge chocolate cake mix or Lemon Cake Mix (and ingredients necessary to prepare the cake)
2 pounds ricotta cheese
1 cup sugar (I have even used Spelenda before)
4 eggs
1 teaspoon vanilla (For the Lemon you can use Lemon extract, but you you do not have to)
1 box (3 3/4 oz.) instant chocolate pudding or Lemon Pudding
1 cup milk
8 ounces non Thick Cool Whip, thawed

Preheat oven to 350°F.
Prepare cake batter as directed on box and pour into greased and floured 9 x 13 pan (I use the decorated foil pans with lids usually 2 for $4.00)
In separate bowl, combine ricotta, sugar, eggs, and vanilla; mix well. Spoon over unbaked cake batter. Bake for 1 hour. Cool completely!! Important
To make icing, mix instant pudding with milk; fold in whipped topping. Mix completely then Spread over cake and refrigerate util ready to serve.
** Believe it or not it's actually best if you can refridgerate over night!! Also on the Lemon Cake if you are having a get together and want it to look pretty you can make thin slices of Lemon and place on top, it gives it a zang and looks pretty!!

No NO NO! Not another. I could not afford another mouth if I wanted to. (which I do) and it better be a GIRL!!! 2 boys ... make that 3 if I include my third child (my husband) I deserve to have a GIRL!!!
But no not pregnant. I did however spend $400 on a new puppy :) (don't tell my husband she cost that much)
... She is only 3 weeks old right now so I can not bring her home yet.

No it wasn't a joke pink I am sure she does want the recipe, I was just suggesting that if she is craving a seafood meal then it must mean a lil one in on it's way!!! craving=pregnant LOL!!! :p
AND yes you do deserve a girl but I tell ya they are more trouble than any boy I bet!!!1 Ask me I have one LOL!!!!!

The following brownie recipe is my friends...I've done it and it is really great ...especially for the kids:
Brownies
1 cup (2 sticks) butter or margarine
5 ounces unsweetened chocolate, chopped
2 cups sugar
4 large eggs
2 teaspoons vanilla
1-1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts
1 cup milk chocolate chips
- Butter 13 x 9 x 2-inch baking pan.
- Melt butter and chocolate in a large, heavy saucepan over low heat,
stirring constantly until smooth. Remove from heat.
- Stir in sugar, eggs, and vanilla.
- Mix flour, baking powder and salt in small bowl.
- Add to chocolate mixture and whisk to blend.
- Stir in walnuts and milk chocolate.
- Preheat oven to 350 F.
- Pour batter into pan.
- Bake brownies until tester inserted into center comes out clean,
or about 35 minutes.

i guess one of my favorites is my potato salad or macaroni salad
I will not use celery or onions as I do not like none of that stuff
I cube my papas
cut up 5 or six dill pickles
boil like 8 eggs
mayonaisse and mustard then add olives
Enchiladas:
carne molida
La Victoria salsa
corn tortillas
put queso and some salsa added to meat to keep the meat from getting to dry
Queso on top of rolled enchiladas
then cook for at least 15 min in oven
Rice:
Brown some rice in skillet
add can of Pato mexican tomato sauce, enough to add great taste
tomatoes
garlic and basil, oregano ;)
not in order

Everything is to taste ... I am also an eyeball it kind of cooker.
Chicken Chipotle Avacodo Wraps
Chicken Breast Cut In Strips
Chipotle in Abodo Sauce
Chipotle Tabasco
Mayo
Sliced Avacodos
Sliced Tomatoe
Flour Tortillas
Cook chicken breast in skillet w/chipotle tabasco (to taste)
Blend Mayo & Chipotle w/Abodo (to taste)
On tortilla put chicken, avacodo, tomatoe & chipotle mayo mix.
YUMMMMMY!!! Lets Eat!
