Put the sugar and corn starch in a large saucepan and blend well.
Add the boiling water.
Cook over medium heat, stirring constantly until mixture thickens into a sticky liquid, about five minutes.
Remove from heat and stir in the jell-o packet until well blended.
Let the mixture cool to room temperature.
Arrange the strawberries point-end up in the pie shell. Pour the cooled mixture over the berries. Refridgerate the pies until set, about two hours. Whip the cream with a few spoons of powdered sugar and dollop on before serving as a garnish.

Hmmmm this sounds really really good! I love strawberries, and my dad gets a big box for only $10....I'll try it, thanks :)

This does sound super yummy. But...every time I bake a pie I end up eating the whole thing. haha

Now I feel a little better knowing I am not the only one who does it

I made three because I got a big flat of strawberries for free at my work. I gave two away but we ate the one I saved for ourselves so fast that later I regretted giving those other two away....Hehe
