View Full Version : sopa seca de fideos--mexican noodle casserole!

1. heat oil in a large frying pan and fry the uncooked pasta until it begins to turn a toasty brown color. remove pasta from pan and set aside.
2. add more oil if necessary and fry the onion until softened (5-8 min).
3. add the garlic, sazon, salt, oregano, and chili powder and cook for 1-2 mins more.
4. add tomatoes and the juice in the can and chipotles and cook for 1-2 mins. more.
5. add toasted pasta and cover with chicken broth. mix well and adjust salt to taste. bring to a boil, then lower heat and simmer until pasta is tender.
6. transfer mixture to baking dish. top with shredded cheddar (or any other kind of cheese). bake for 10-20 minutes until cheese is melted and mixture is hot and bubbly.

This sounds good and a nice replacement for rice, once in a while.

hmmm I've never baked it or put in that many spices.. I'll have to try it sometime.
How hot does it get with just two chipotle chiles?? My husband is not a huge pasta fan so sopa is usually just for me and the kids.

remember there is a tsp of chili powder in there too...i like spicy food so it's good for me this way, but it is pretty spicy...you might want to cut back for the kids.

I like it spicy too, I usually end up making two of things, one without chile for the kids, and one without for us.
