i use this one, but i just throw everything in the crock pot. my husband says it tastes pretty authentic. it uses pork but i'm sure you can use whatever kind of meat you want.

the stuff you use just for color is achiote (annatto). this recipe doesn't use it but i'm sure you can throw some in cause it doesn't have much flavor, just color.
