I just made some tamales!!

I used Maseca since there's no way I can get some Masa around here.

I can give you the recipe but I never measure anything, I just eyeball it so I don't know how this will would work out.

Maseca is the mix used to make tortillas

We use pork and mole
or chicken and salsa verde
or raja chiles w/ mozzarella cheese


maseca , baking soda , salt the caldo from the meat and lard.

I pretty much follow the recipe on the Maseca package and it works great. For fillings I usually do Mole or salsa verde with chicken. The chiles with cheese sound great...I think I will try that next time

ok i see...

so how do i make them , i really need a step by step recipe cause I have no idea at all whatsoever...

i only know tamales from the mexican store..... i have no idea how to make them especialy the wrapthing ...

Have you ever seen someone make them?....for me I watched someone do it the first time and that really helps. You can find an online recipes, but that might be harder than just seeing someone do it....

husbands sister knows how to make them and braggs about it but when i ask she doesnt want to tell me.....

Seriously? All the mexican women I know are thrilled to show me how to make something...I think they see it as a complement to their cooking abilities....I learned from a Mexican neighbor years ago. Basically you soak the husks, spread the masa out, place the meat and sauce in the middle, roll and fold. But, everyone has their own little take on the placement on the husk and how they roll and fold, so that's the part that is really helpful to see others do. I have a book called Tamales 101 that has some good descriptions of other methods, so perhaps you can search for an online receipe with some photos...it's not hard, but their is some technique....all this talk makes me want a tamale

oh my gosh I know how to make some but it's only in HUGE quantities... I'm talking like 130 dozen of tamales and done in days worth of work!

http://recipezaar.com has some pretty good tamales recipes.

Look for the ones with tons of 5 stars reviews and you will end with delicious tamales.


Usually you need to get corn husk at walmart or any mexican store, masa or maseca depending on whether you can get your hands on fresh masa or not. Manteca (pig's fat) or oil if you are not crazy about using the manteca which by the way add better flavor. You will also need to have either shredded chicken, pork or beef. I like all of them and I also make the ones with jalapeño rajas and mozzarella cheese. Hubby loves all the flavors. I even make fruit tamales with strawberry or pineapple.

You also need baking soda and a tiny bit of salt. If you want to make things easier buy the salsa already prepared. Walmart has this salsa that is imported from Mexico and is made of green tomatillos. It's so tasty and use it once in a while when I'm too lazy to make my own salsa.

Go check those recipes. If you need help PM me. Just like chicaprada I eye ball everything unless I'm following a recipe then I grab the measuring cups.

I have done a couple of recipes from the recipezaar website and they are pretty good. I always make the ones that have tons of reviews and are 5 stars rated.

this weekend i will try to make some, hopefully i will find all ingredients..

one more questions.... lol... i know u all gonna laugh now.... so after i roll them all up and stuff do i have to put it in the oven or the pan....i have no idea really...

and as of SIL and even MIL they really dont want to show anything... they just laugh and say something in spanish and roll their eyes.....
oh well, i guess he has to stick with german food for a while...

Tamales are steamed...I use a special tamale pot that basically allows you to have the water full of water with a raised platform on which you place the tamales...BUT, a friend of ours who is an amazing cook from Vera Cruz and makes banana leaf tamales just uses a big pot with a heat proof bowl to prop up the tamales above the boiling water and them she piles on the tamales and covers it all with foil to keep the steam in...very resourceful. You can buy tamale steamers at Mexican stores....maybe someone else has other methods they have seen to do it with out the special pan...

Don't forget salt in the water used to steam....
I always use a tortilla press to make the masa to put in the husks, easier for me, but other mexican women that see me do it don't like it that way.. they say it's easier the other way.. it's just he way you're taught.
If I get time I'll post my recipe.. If I were you I would search on the internet than you can see the process. Let me see if I can find a link to a really good site I found one time....

I wish I knew how to make them. We just order every saturday, from the tamale lady.
They are so good. She sells us a dozen for $10. She's a good friend yet, we still call her tamale lady (or doña). Yay!! tomorrow is saturday.!!

Hubby and I made tamales last year for Christmas - we did end up using the tamale press for the masa because it is a lot easier. I like a lot of masa, but hubby doesn't - I still have a problem making them too big - I tell hubby he never eats just one anyway, so why not have a couple of big ones in there?
Also - if you can't find the corn husks - you can use parchement paper. We did this last year, not because we couldn't find the husks - but because we were making so many it was just easier. Sometimes the husks are too small and you have to put two together and it just makes it harder. We had a little assembly line going - we pre-cut the parchement paper and hubby did the masa while I filled it and folded it..
We've always bought the masa - in California it's not hard to find a good Mexican market that sells it! I would like to try and make masa to see how it works out. I use Maseca for tortillas, maybe I'll give it a try! The holidays are around the corner - it's time to get down the tamale pot!

we use chicken with xala (it's called pipian in other parts of mexico i think). just toast some green hulled pumpkin seeds and food-process them wiht a little water and maybe some onion and salt...it's the best sauce ever, esp mixed with salsa de chile ancho.

Mymexicanman, do you speak spanish? I CAN make mexican tamales, the traditional ones with the original recipe from the south of Mexico. They are called 'Tamales Oaxaqueños'. I'm not from Oaxaca, I'm from Acapulco, Guerrero, that is next to Oaxaca. It would be easier to me to give you the recipe in spanish or may be someone else can do the translation for us, because it's a lot of work and the process is long (like immigration, LOL), but you'll have the best tamales ever.

Please share, even if you post it in Spanish. I absolutely love Oaxaca style tamales. My old contact moved out of State. I used to buy from her all the time. PLEEEEAAAAASSSSEEEE!!!

I gotta admit I like her tamales, I dont like the corn wrapped ones normally....but her banana leave wrapped ones rock! I imagine her and I using the same account will confuse you all :smile:
