We've been living on black beans and saffron rice lately b/c it is cheap and fast. I serve it with tomato, jalepeno, sauteed onions/garlic and pepper jack cheese. Yum.

Ok..now I am craving a sundae from Friendly's. I grew up in CT and they are all over the place...but none here in Indianapolis....
We will probably have chicken nuggets for dinner...it's about all my daughter has eaten in the past week and it is easy for me so I don't fight too hard....

Well in honor of Cinco de Mayo I thought (and it was within my benefit they are called left overs) I am going to make enchiladas from left over taco salad fixins, the meat and cheese that is and leave it at that.
The all AMERICAN meal I love is
Pork chops (baked in the oven)
French style Green Beans
and Seasoned egg noodles
(seasoned with a can of cream of chicken soup LOL!!)
That is what we are having tomorrow ther is an idea, hope it helped.

For my caldo for chile rellenos I take some of the chile approx. 1 and chop it up into small rectangles. Add a few rectangles to the blender. Also put tomatos that have been peeled garlic, and a little onion. Oh and if you want a little of that tomate conseme. Than I fry the rectangles of chile, and add flour. (like you're making gravy, only it's tomato gravy. Add the blended mixture and stir until thick.
I think it is a spaghetti night. Sounds quick and easy...
