For the I-601? In my packet I included letters from family......I just asked them to state what they have witnessed in our relationship? How strong we are? What do they think about our future? When we met? When we got married? Any positive changes they have seen in either of us since we've met?

Ditto to what cherrycandy said, and it would probably be helpful to have people close to you write about the hardship that your husband would experience if you were not allowed to return to the US/if your husband had to relocate to your country.
It really does depend on the purpose of the letter. The best ones are those used to help support your husband's claim of hardship. For example, if he is taking care of an elderly and/or ill family member, then have that family member write a letter about how much your husband helps, and how much he is needed. If your husband has a medical condition, a supporting letter from his doctor is a must.

my lawyer said all the letters should emphasize the hardship especially to me but also to other family members if my fiance is not allowed to come here and I have to go there. Also they are to state their relationship to me and what they know about my relationship with my fiance.. so all my support letters are doing this... I have so far one from my father, one from a cousin and one from the minister at my church, who is from Korea so knows what it's like there. Also one from a college student at the church who can talk about the difficulty with an American student trying to get an education in a Korean public school.

doctor's letters to support what my father and I say about our medical conditions
my fiance's support letter is from a member of his church who talks about how he came to the church after his wife died and how he regrets past mistakes, would be a good US citizen, etc.

This is an example and all letters should be different

I am writing this letter in support of my nephew, XXXX and his wife’s XXX immigrant case. My name is Mrs. Smith and I am US citizen by birth. I have known XX since he was little. Every Thanksgiving he has been in my house.
In 2003 he married XXX. I have never see his so happy. You can clearly see that they are in love. Marina makes my nephew so happy- his face lightens up when he sees her, he is always by her side, always hugging her.
Lately he was very down and yesterday he have told me of his wife’s immigration problems. I have never seen him crying in my life. He was telling me this heartbreaking story and he said that he would die for his wife if he has to.
I am pleading you not to separate my nephew from his wife. In Bible said: What God united no man show divide. If Marina is not admitted back to the US it would be not only an extreme hardship for my nephew, it would be also hardship for all our family. She makes him complete, he is better person with her.

Respectfully,
