Add all ingrediants in pot and simmer on med heat until rice is soft. May need to add more chicken stock to it depending on how fast it cooks. You can use coconut milk in place of chicken stock but it will be VERY high in fat!

Coconut shrimp/or chicken goes well with this dish!
1-2 lbs shrimp or chicken
1/2 c coconut (for topping)
1-2 yellow or red sweet bells peppers
1 bunch fresh basil
1-3 asian chillies
cooking oil such as olive oil
Seed your bell peppers and cut into thin strips. If using chicken cut into thin strips. If using shrimp make sure you devein and peel them. Cut up chillies into small pieces. Stir fry everything except coconut. The coconut is used to top the dish.
This dish goes over the rice, and then coconut tops it all:)
