I don't know if I should be posting this question on this forum, so please excuse me if I have the wrong place.

My parents lived in the US for over 15 years. Five years ago they went to Mexico and they were caught by ICE, were fingerprinted and deported to Mexico. At the time, they were told that they could not come back into the US for five years. They live in Mexico and will try to get a tourist visa to visit me and my brothers. They have not interest in staying in the US.

My question is, if they are denied a tourist visa because of their previous record, could I, a legal resident, do something about it?

unfortunatly no, if the official at the US Embassy denies them a turist visa, which will probably happen. there's nothing that you can do.
You can visit them, but they cannot come to USA.

Well, after you are a citizen you can petition for them, but if they had illegal presence they will have a 10-year bar.

So say five years from now their 10-year bar will be up, right? Three years from now you can get your citizenship and then petitioning a parent takes as long petitioning a spouse, so theoretically they could become PRs after another five years.

As far as non-immigrant visas, you can't really do anything about that. They will have 10-year bars (but it sounds like five years has already passed) for those too, so they would need a non-immigrant visa waiver to overcome the bar.
